When I came to Sri Lanka, my plan was to experience the island’s bountiful nature, to immerse myself in its history. I did not expect that I would find cinnamon. Truly ‘find’ it. While the common cinnamon I was familiar with was strong, almost overpowering, and spicy; this cinnamon was gentle, subtly aromatic, and with a complex sweetness. I couldn’t get enough.
Sri Lankan ‘Ceylon Cinnamon’, is not a simply grown cash crop. The growing, nurturing, and harvest, all take an amazing amount of dedication and skill. For those who do not know, it is made from the dried inner bark of a particular tree. Each tree takes four years to mature, and during that time are carefully tended by the families that farm them. Pruning away branches that are unsuitable and making sure the trees are kept healthy in an increasingly unpredictable environment. Once harvest time comes, uniquely trained branch peelers with decades of carefully honed experience must devote hours of work to the task. These men do this by hand, and the quality of the final product is determined entirely by their skill.
To produce valuable quills of cinnamon, the bark must be shaved extremely thin and with great care. Even the most experienced of peelers, those who have devoted many, many years of their lives to the practice, take several hours to produce only several pounds.
To witness the various steps of this process, one becomes aware just how closely connected the growers are to the natural cycle, and to the lives of these trees, and of the long discipline required to create something so unique and delicate. It is much more than just another product, but a culmination of nature. Rather than supporting big companies, churning out thousands of pounds of heavily processed goods, Ceylon Cinnamon is sourced directly from the communities that farm and harvest it. Supporting their families, their personal and cultural history, and the increasingly rare skill required to bring out the best of this special cinnamon.
I knew I must find a way to more directly share this special treasure with others, and to nurture the community who to this day carry on the tradition.

Sri Lanka, the island of spices and exotic flavours has long been a trading hub and main source for spices. Historical records speak of traders around the world flocking to the shores of Sri Lanka as early as the 13th Century. The country’s global fame for finest quality spices also brought many colonial powers to its doors, leading to nearly 500 years of colonial rule.
Today, Sri Lanka continues to provide the world with the finest spices, formed by its unique terroir. The spices of Sri Lanka have unique chemical composition, flavor, and aroma notes, making them highly sought products in the global market. Sri Lankan spice and concentrate industry is composed of a large variety of products, ranging from bulk spice products like true cinnamon to value-added essential oils. Due to their unique flavour and aroma, Sri Lankan spices and cinnamon are identified under the geographical indication and brand name of Ceylon Spices and Ceylon Cinnamon.
The main spices produced in Sri Lanka include True Cinnamon, Pepper, Cardamom, Cloves, Nutmeg and Mace and the country is the ninth most important exporter of spices in the world. The country has also expanded its spice cultivation to include ginger and vanilla for the global market.
